Once you have plenty of coins, start selling your eateries and grocery stores and either buy houses again, or use the space for whatever else you want to do. After you are full on passengers, and you can’t collect any more of them, sell a bunch of your unnecessary houses (since unfortunately the game doesn’t let you put anything in storage), buy a bunch of Eateries and Grocery Stores and put them in your city, and start collecting from them over and over again until you have enough coins to do whatever it is you need to do and then some.
